Pork Loin Chop with Lemon Caper sauce
- 1 pack Gorgeous George Meatery Pork Loin Chops
- 1/2 Onion finely diced
- 2 Garlic cloves finely diced
- 2 Tbsp drained Capers
- 4 Tbsp Butter
- 1 Tbsp Flour
- 1 cup White Wine
- 1 cup Chicken stock
- 2 Tbsp fresh Parsley chopped
- 1 tsp Lemon zest
- juice of 1/2 a Lemon
- a few stalks of fresh Thyme
Heat up a pan to medium high heat and while the pan is heating up, season the Pork chops with salt & pepper.
Add a little Olive Oil to the pan, 2 Tbsp of the butter and the Thyme so that the Thyme can impart its flavour into the butter and oil.
Now add the seasoned Pork chops and fry until it golden brown on both sides but not fully cooked yet.
Remove the Pork chops and cover to keep warm while we make the sauce.
Discard the thyme stalks at the same time.
For the sauce, we start off by reducing the heat to medium and frying the Onion & Garlic until soft and translucent.
Now sprinkle the flour into the pan and cook this for another 2 – 3 mins to help remove the ‘floury’ taste.
Now whisk in the White Wine and Chicken stock and simmer this for another 10 mins to create a delicious thickened sauce.
Then its time to add the drained Capers, Lemon Zest, Parsley, Lemon juice and the rest of the butter and cook through for a couple more minutes.
Finally, add the Pork chops back to the pan and warm through in the sauce before serving.
When the temperatures start to drop, add a little decadence by seasoning the Pork chops the day before and marinating them in 500ml Buttermilk overnight. Do not add the Buttermilk to the sauce though, I know it is tempting
